Banana Chocolate Chip Muffins

What’s better than banana muffins? Banana chocolate chip muffins. That’s what! Everything is better with chocolate. Isn’t it? This recipe takes my classic banana muffins to new heights by adding in some semi-sweet chocolate chips. Combining the creaminess of bananas, complimented with a rich chocolate taste, these banana chocolate chip muffins are kid tasted and approved. Do you need to use up those bananas? Then this recipe is a must!

Using a hand mixer, in a large bowl beat the vegetable shortening and sugar until light and fluffy. Add water, vanilla and egg and beat. Mash the bananas and beat until just combined. Add flour, baking powder, baking soda and salt and beat until just combined. Stir in chocolate chips!

Line a muffin pan with paper liners. Fill liners 3/4 way full.

Sprinkle sugar on top.

Bake at 350 degrees for 17-20 minutes or until a toothpick comes out clean. Sprinkle more chocolate chips on the top after muffins come out. Let cool for 5-10 minutes.

Eat fresh out of the oven!

To freeze: wrap individually in plastic wrap and place in a freezer bag.

  • 1/3 cup vegetable shortening
  • 2/3 cup granulated sugar
  • 2 tsp water
  • 1 tsp pure vanilla extract
  • 1 egg
  • 1 cup mashed bananas
  • 1 1/3 cups flour
  • 2/3 tsp baking powder
  • 2/3 tsp baking soda
  • 2/3 tsp salt

Instructions
 

  • Preheat oven to 350 degrees
  • In a large mixing bowl, beat vegetable shortening and sugar
  • Add water, vanilla and egg and beat
  • Mash bananas with a fork and add to mixing bowl and beat until combined
  • Add flour, baking powder, baking soda and salt until combined
  • Mix in chocolate chips
  • Line a muffin pan with paper liners
  • Fill liners 3/4 way full
  • Sprinkle sugar on top
  • Bake for 17-20 minutes or until a toothpick comes out clean
  • Sprinkle on more chocolate chips on top
  • Let cool for 5-10 minutes
