My husband and I enjoy inviting our friends over for dinner parties. Last year when we hosted a Christmas dinner party, I quickly whipped up these No Bake Chocolate Peppermint Cookies as part of my dessert table. They were a huge hit! My guests not only enjoyed them, but they asked me for the recipe!
My friends know I enjoy making intricate desserts, but sometimes the most simple desserts are often the ones that make the biggest impression. These cookies are not only super easy to make but are also a great and festive addition to your Christmas cookie tray!

No Bake Chocolate Peppermint Cookies-Ingredients
White chocolate melting wafers, peppermint extract, chocolate wafers, candy canes.
Instructions
Line 2 baking sheets with parchment paper. Place candy canes in a plastic bag. Using a rolling pin, gently tap the candy canes to crush.
Place in a bowl and set aside.
Heat white chocolate wafers in a microwave safe bowl according to package directions. Add one teaspoon of peppermint extract and stir well.
Dip chocolate wafers into melted white chocolate, covering about 3/4 of the wafer.
Set on parchment lined baking sheet. Add crushed peppermint to the top of the cookie.
Let set until firm.
Serve and enjoy!
To freeze: store in an airtight container for up to 3 months. Place wax paper between layers.
