A few weekends ago, my daughter Emma and I went to a Mexican restaurant and she ordered fried ice cream for dessert. I asked our waitress to bring an extra spoon because of course, I needed to have a bite. It was delicious! And ever since, we have wanted to make it at home for dessert. So if you too are a fan of fried ice cream, but hate the mess and extra oil that comes with deep-frying then you’re in luck! In this recipe, we’ll show you how to achieve the same crispy texture of fried ice cream without all the hassle, mess and grease. Best of all, it’s quick and easy to make, and can be customized with different toppings and flavors. Read on for our no-fry fried ice cream recipe. Trust me, you’re going to love it!
What do I need to make No-Fry Fried Ice Cream?
- Corn flakes cereal: gives the fried ice cream that crispy crunch.
- Melted butter: helps the sugar and cinnamon topping to stick to the cornflakes.
- Brown sugar: gives the cornflake mixture a caramel-like taste.
- Ground cinnamon: adds depth and flavor to your no-fry fried ice cream. In addition, brown sugar and cinnamon go great together!
- Vanilla ice cream: my favorite is Friendly’s ice cream but use your favorite brand.
No-Fry Fried Ice Cream-Ingredients
- 1.5 quarts vanilla ice cream
- 1/4 cup dark brown sugar
- 2 tbsp butter
- 1 tsp ground cinnamon
- 2.5 cups crushed corn flakes
- Optional: chocolate or caramel sauce, whipped cream and a cherry
Instructions
- Preheat oven to 350 degrees.
- Using an ice cream scoop, scoop out tennis-sized balls and place onto a parchment-lined tray.
- Freeze the ice cream balls for at least 1 hour or until solid.
- While the ice cream is freezing, crush the cornflakes in a plastic bag using a rolling pin or pulse them in a food processor until they become coarse crumbs.
- In a mixing bowl, combine the crushed cornflakes, sugar, and cinnamon.
- Pour the melted butter into the mixing bowl and stir until well combined.
- Place cornflake mixture on a baking sheet and bake for about 4-6 minutes, or until lightly browned. Let cool for about 15 minutes.
- Take out the frozen ice cream balls and roll them into the cornflake mixture until they are fully coated.
- Place the coated ice cream balls back on the parchment-lined tray and freeze again for at least 1 hour or until solid.
- Take the ice cream balls out of the freezer and drizzle on your favorite toppings if desired.
- Serve and enjoy!
Best Toppings for Fried Ice Cream
My personal favorite for this no-fry fried ice cream is caramel sauce. The caramel sauce compliments the cinnamon, brown sugar, cornflake topping nicely! However choose your favorites and enjoy!
- Ice cream sauces: add some caramel, chocolate, strawberry, or marshmallow sauce and drizzle it over the top.
- Whipped cream: top off your fried ice cream with some whipped cream! Don’t forget to add a maraschino cherry to the top!
- Fresh fruit: blueberries, raspberries, strawberries, bananas, mangos, pineapple, etc. Cut up your favorites and sprinkle it over the top of your fried ice cream.
Different Variations
- Swap out the ice cream: try using different ice cream flavors like chocolate or strawberry. Want a minty flavor? Then use mint chocolate chip. The possibilities are endless! Try your favorite ice cream and pair it will your favorite toppings!
- Customize your cornflake mixture! instead of cornflakes try using some crushed up graham crackers, pretzels, granola or even potato chips for a salty-sweet combination.
- Add-ins: in addition, add a little tropical flavor and texture by adding some coconut or nuts to the cornflake mixture.
