This Pear and Goat Cheese Salad with Candied Walnuts was a big hit with my family! Jim made rack of lamb for New Year’s Day, our annual tradition, and I made this salad to go with it. Absolutely delicious is the only way to describe it!

Pear and Goat Cheese Salad with Candied Walnuts-Instructions

I used mixed greens and then I loaded it up with goat cheese. I LOVE goat cheese! It’s super creamy, with a hint of tartness that gives it that distinct flavor that is hard to resist.

A great compliment to the goat cheese’s tartness was adding the sweetness of a fresh pear. Cut up your pair into cubes and add it to your salad. A perfect pairing! Furthermore, pears have nutritional benefits as well. They are packed with fiber, vitamins and minerals, that help inflammation, promote gut and heart health, and may protect against certain diseases.

In addition, I added my Easy Candied Walnuts to give the salad texture and needed crunch! If you are like me, I’ve got to have some crunch in my salad. Gotta love nuts, because they are also loaded with protein and healthy fats too! They also help to reduce your risk of heart disease.

Then, I threw in a handful of Craisins to give it that chewy texture and some blueberries too! Blueberries are high in antioxidants, potassium and vitamin C. They provide your body with anti-inflammatories thus helping you with muscle soreness, aches and pains. They can also lower your risk of heart disease and cancer as well!

Don’t forget the Simple Maple Balsamic Dressing that only takes a few minutes to make. This dressing will add that intense and sweet flavor to this salad! Delicious and nutritious! A great way to kick off the New Year!

Ingredients
  

  • 4 cups mixed greens
  • 1 pear cut into cubes
  • 1/4 cup goat cheese crumbled
  • 1/4 cup candied walnuts
  • 1/4 cup blueberries
  • 1/8 cup Craisins blueberry infused

Instructions
 

  • In a large bowl, add mixed greens. Top with pear, goat cheese, candied walnuts, blueberries, and Craisins.
  • Serve with Maple Balsamic Dressing.
