This Quick Prep Meatloaf takes only five minutes to mix up and is super moist and delicious! Unlike most dense meatloafs, this one is light and will leave you wanting more!
Fall is here and so are my easy, indoor recipes for you to make on those busy nights! My kids after school sports are in high gear right now and I don’t have hours to spend on making a meal for them to eat before or after practice. So last night, in between brining three girls to three separate activities, I decided it was time to make this Quick Prep Meatloaf. My family loves it and it is super easy to make! A got-to for those busy nights!
My mom made this meatloaf when I was a kid and there are two versions. One uses a can of cream of mushroom soup and the other a can of tomato soup. I prefer the cream of mushroom soup over the tomato soup and to this day, I still do. Experiment on the two versions and decide for yourself which one you and your family like best!

Quick Prep Meatloaf-Ingredients
Salt, fresh parsley, pepper, plain bread crumbs, ground beef, cream of mushroom soup, egg.
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl add ground beef, bread crumbs, 1/2 a can cream of mushroom soup, egg, parsley, salt and pepper.
Use your hands and mix well.
Place the mixed ingredients in a meatloaf pan and push into the edges of the pan. Spread remaining 1/2 can of cream of mushroom soup over the top of the meatloaf.
Bake for 1 hour. Let cool for 15 minutes.
Cut, serve and enjoy!

- 1 1/2 lbs. ground beef
- 1/2 cup plain bread crumbs
- 1 can cream of mushroom soup divided
- 1 egg
- 3 tsp fresh parsley chopped fine
- 1 tsp salt
- 1/2 tsp pepper
