This bread is dense, moist and has a nice fluffy texture. What I love about this bread is the glaze topping, that delivers that burst of lemon flavor. Simple Glazed Coconut-Lemon Bread-Ingredients
Salt, sugar, flour, buttermilk, canola oil, baking spray with flour, baking powder, coconut, lemon zest, lemon juice, pure vanilla extract, eggs and butter.
Simple Glazed Coconut-Lemon Bread-Instructions
- Preheat oven to 350 degrees.
- Spray the bread pan with baking spray with flour. Set aside.
- Using a small saucepan, melt butter. Set aside too cool.
- In a large bowl, whisk together flour, baking powder and salt. Set aside.
- Using a hand mixer or stand mixer with a paddle attachment, beat the eggs and sugar until light and fluffy.
- Add in melted butter, canola oil, lemon zest, lemon juice and pure vanilla extract. Beat until combined.
- Add dry ingredients, alternating with buttermilk, and beat until combined.
- Stir in coconut.
- Pour batter into prepared bread pan.
- Bake on the center rack for 45-55 minutes or until a toothpick inserted in the middle comes out clean.
- Let the bread cool in the pan for about 10 minutes. Then remove the bread from the pan and transfer it to a cooling rack. Let cool completely before adding the glaze.
Lemon Glaze-Instructions
- In a small bowl, add powdered sugar, lemon juice, melted butter and pure vanilla extract. Whisk until smooth.
- Spread over the top of the bread. Immediately sprinkle the coconut over the glaze. Let set before cutting.
- Enjoy!
To freeze: wrap with heavy duty foil and place in a freezer bag for up to 3 months.
