My mom loves lemon and I love coconut! The best of both worlds! When combined together, this Simple Glazed Coconut-Lemon Bread is hard to beat! This bread is dense, moist and has a nice fluffy texture. What I love about this bread is the glaze topping, that delivers that burst of lemon flavor. In addition, the coconut adds texture that I love! This bread is so versatile too! Eat it for breakfast, a mid-day snack or for dessert! There’s no wrong time to indulge!

Simple Glazed Coconut-Lemon Bread-Ingredients

Salt, sugar, flour, buttermilk, canola oil, baking spray with flour, baking powder, coconut, lemon zest, lemon juice, pure vanilla extract, eggs and butter.

Simple Glazed Coconut-Lemon Bread-Instructions

  1. Preheat oven to 350 degrees.
  2. Spray the bread pan with baking spray with flour. Set aside.
  3. Using a small saucepan, melt butter. Set aside too cool.
  4. In a large bowl, whisk together flour, baking powder and salt. Set aside.
  5. Using a hand mixer or stand mixer with a paddle attachment, beat the eggs and sugar until light and fluffy.
  6. Add in melted butter, canola oil, lemon zest, lemon juice and pure vanilla extract. Beat until combined.
  7. Add dry ingredients, alternating with buttermilk, and beat until combined.
  8. Stir in coconut.
  9. Pour batter into prepared bread pan. 
  10. Bake on the center rack for 45-55 minutes or until a toothpick inserted in the middle comes out clean.
  11. Let the bread cool in the pan for about 10 minutes. Then remove the bread from the pan and transfer it to a cooling rack. Let cool completely before adding the glaze.

Lemon Glaze-Instructions

  1. In a small bowl, add powdered sugar, lemon juice, melted butter and pure vanilla extract. Whisk until smooth. 
  2. Spread over the top of the bread. Immediately sprinkle the coconut over the glaze. Let set before cutting.
  3. Enjoy!

To freeze: wrap with heavy duty foil and place in a freezer bag for up to 3 months.

  • 2 1/2 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs

  • 3 tbsp canola oil or vegetable oil
  • 2 tbsp lemon zest
  • 1 1/2 tbsp lemon juice fresh squeezed
  • 1 tsp pure vanilla extract
  • 1 cup buttermilk
  • 1/2 cup coconut

Lemon Glaze

  • 3/4 cup powdered sugar
  • 1 1/2 tbsp lemon juice fresh squeezed
  • 1/4 tsp pure vanilla extract
  • 1 tbsp butter melted
  • 1/2-1 cup coconut

Instructions
 

  • Preheat oven to 350 degrees.
