Did you know that today, August 10, 2020 is National S’mores Day? Who doesn’t love s’mores? Every time I hear the word “s’mores,” I think back to when I was a kid. Open flame, large stick, big marshmallows roasting over the crackling campfire, waiting to be sandwiched between two graham crackers and a piece of chocolate. Is your mouth watering yet?
My girls and I love to roast marshmallows and make s’mores. During the summer, we roast them over the fire pit and in the winter, over the gas cooktop. Yes, it’s true, we roast them in the kitchen!
The only issue with making the traditional s’mores treat is that they are unbelievably messy and sticky. However, these S’mores Magic Cookie Bars are equally chewy, gooey and delicious minus the mess. In addition, you can make a whole batch at once!
Fun Facts about S’mores
- According to Wikipedia, a s’mores is a popular campfire treat in the United States, Mexico and Canada. S’mores consist of a roasted marshmallow, sandwiched between a layer of chocolate and two graham crackers.
- In 1927, the first known s’mores recipe was published in the Girl Scouts Handbook. It was originally called “some mores.”
- The world’s largest s’mores weighs in at 267 pounds and is 5-feet by 5-feet. It took over 100 volunteers to assemble it and eat it.
- There are multiple ways to make s’mores. In addition to the campfire, you can make s’mores using an oven, blow torch, gas stove, microwave, grill or broiler.
- According to The Hershey Company, over 373 million chocolate bars are made each year. This is enough to make over 746 million s’mores!

Gooey S’mores Magic Cookie Bars-Ingredients
Crust: Graham cracker crumbs, sugar, butter. Sugar Cookie Filling: Sugar, salt, baking soda, egg, flour, vanilla, vegetable shortening, butter. Topping: Sweetened condensed milk, mini-marshmallows, semi-sweet chocolate chips, mini-chocolate chips.
Graham Cracker Crust-Bottom Layer
Preheat oven to 375 degrees. In a stove top pan, melt the butter.
Combine graham crackers, sugar and melted butter. Mix well.
Press into a 9×13 inch pan.
Sugar Cookie Layer
In a stand mixer with a paddle attachment or a hand mixer, combine butter, vegetable shortening and sugar. Beat until light and fluffy.
Add egg and vanilla and beat until combined.
Mix together dry ingredients (flour, salt, and baking soda). Add to the mixing bowl.
Beat until a soft dough forms.
Using flowered hands, press the dough into the pan, spreading evenly. Start off taking a small amount of dough and press in between your hands. Set on top of the graham cracker crust.
Gooey S’mores Magic Cookie Bars-Topping
Sprinkle, semi-sweet chocolate chips, mini-chips and mini-marshmallows over the dough. Pour sweetened condensed milk over the top.
Bake for 25 minutes at 375 degrees. Edges and marshmallows should be golden brown.
Let cool before cutting. Optional: Add some more marshmallows to the top. If you have a blow torch, gently toast the marshmallows.

Ingredients
Graham Cracker Crust
- 1 cup graham crackers
- 2 tbsp sugar
- 1/4 cup butter melted
Sugar Cookie Layer
- 1/4 cup butter softened
- 2 tbsp vegetable shortening
- 1/2 cup sugar
- 1 tsp pure vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 1/4 cup flour
Topping
- 1 cup semi-sweet chocolate chips
- 1/2 cup mini-chocolate chips
- 1 1/2 cups mini-marshmallows
- 1 can sweetened condensed milk
Instructions
