Sweet & Simple Apple Pie Cupcakes-Ingredients
Vanilla Cupcakes
- 2 1/2 cups flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 1/2 cup sour cream
- 1/2 cup milk
- 2 tsp pure vanilla extract
Apple Pie Filling
- 4 Granny Smith apples (washed, peeled, cubed)
- 4 tbsp butter
- 1/4 cup granulated sugar
- 1/4 cup dark brown sugar (packed)
- 1 tbsp flour
- 1 tsp cinnamon
- pinch salt
- 2 tsp lemon juice
Cinnamon Buttercream Frosting
- 2 sticks butter (unsalted)
- 4 cups powdered sugar
- 4 tbsp milk
- 2 tsp pure vanilla extract
- 1 1/2 tsp cinnamon
- 1/4 tsp salt
Step-by-Step Instructions
Vanilla Cupcakes
- Preheat oven to 350°F (180°C) and line cupcake pans with liners.
- In a large bowl, combine flour, baking powder, salt and cinnamon. Set aside.
- Using a stand mixer with a paddle attachment or a hand mixer, beat the eggs and sugar until light and fluffy.
- Add oil and vanilla and mix until combined. Pour in milk and beat. Add sour cream and beat until combined.
- Add dry ingredients and beat until smooth.
- Pour batter into cupcake liners filling about 1/2 way full.
- Bake for 20-22 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Remove cupcakes from oven. Let cool in pan for 2 minutes, then transfer to a wire rack. Cool completely.
- Using a knife, cut out a 1-inch round piece from the top of each cupcake.
Apple Pie Filling
- Wash, peel, and cube Granny Smith apples. In a large bowl, mix apples, brown sugar, granulated sugar, flour, cinnamon and lemon juice.
- In a fry pan, melt the butter. Add the apple mixture to the pan. Cook over medium heat and caramelize the apples for 40-45 minutes. Stir occassionally. Apples should be tender and a rich, golden brown color.
- Remove from heat and let cool.
Cinnamon Buttercream Frosting
- Using a hand mixer, beat butter, powdered sugar and milk until smooth and creamy.
- Pour in pure vanilla extract, cinnamon and salt and beat until combined.
- Place frosting in a piping bag fitted with a large star tip.
Assembling, Filling & Frosting
- Spoon in apple pie filling to hollowed out cupcake.
- Pipe on frosting.
