Start by allowing the cream cheese to reach room temperature. This step ensures that the cream cheese blends smoothly and evenly into the dip. To expedite the softening process, you can microwave the cream cheese for 15-20 seconds.
Wash, dry and shred lettuce, and chop green peppers, tomatoes, and cucumbers. Put vegetables in a large mixing bowl and mix together with a spoon. Set shredded lettuce aside.
When chopping the cucumber, scoop out the middle. Using a teaspoon, scrape down and scoop out the seeds.
Using a hand mixer, beat the cream cheese.
Add 1/2 of the sour cream and beat. Then mix the other 1/2 of the sour cream and beat. Mix it this way to avoid lumps.
Add your favorite taco seasoning and mix well.
