Ingredients
  

Sugar Cookie Crust

  • 1 1/3 cups flour
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/2 cup butter softened
  • baking spray with flour

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 3 tbsp butter softened

Crisp Topping

  • 1 cup oatmeal
  • 1/2 cup flour
  • 3/4 cup brown sugar
  • 6 tbsp butter cubed

Instructions
 

  • Preheat oven to 350 degrees.

Sugar Cookie Crust

  • In a large mixing bowl, add flour, sugar, egg and butter (softened).
  • Use a pastry cutter and cut the butter and egg into the flour and sugar until a dough starts to form.
  • Gather dough into a disk.
  • Press dough into a pie plate that has been lightly sprayed with baking spray with flour.

Peanut Butter Filling

  • In a mixing bowl, beat peanut butter, butter (softened) and powdered sugar until creamy and incorporated.
  • Gently spread filling over the dough.

Crisp Topping

  • In a microwavable bowl, add oats, flour, brown sugar and butter (cubed). Microwave for 45 seconds or until the butter has mostly melted.
  • Mix together.
  • Spread over peanut butter filling.
  • Bake for 25-30 minutes or until crust is lightly brown.
  • Remove, serve and enjoy!
  • Drizzle chocolate sauce over the top and add a scoop of vanilla ice cream. My favorite way to eat this pie!
