Banana Chocolate Chip Muffins

- 1/3 cup vegetable shortening
- 2/3 cup granulated sugar
- 2 tsp water
- 1 tsp pure vanilla extract
- 1 egg
- 1 cup mashed bananas
- 1 1/3 cups flour
- 2/3 tsp baking powder
- 2/3 tsp baking soda
- 2/3 tsp salt
- 1 1/2 chocolate chips
Preheat oven to 350 degrees.
In a large mixing bowl, beat vegetable shortening and sugar.
Add water, vanilla and egg and beat.
Mash bananas with a fork and add to mixing bowl and beat until combined..
Add flour, baking powder, baking soda and salt until combined.
Mix in chocolate chips.
Line a muffin pan with paper liners.
Fill liners 3/4 way full.
Sprinkle sugar on top.
Bake for 17-20 minutes or until a toothpick comes out clean.
Sprinkle on more chocolate chips on top.
Let cool for 5-10 minutes.
