Grilled Vegetables

This is my favorite way to eat vegetables! Simple, easy and delicious! Grilled vegetables add a smoky, sweet flavor to any summer veggie.

Equipment

  • Grill
  • Grill basket or grill sheet

Ingredients
  

  • 2 whole Pepper (Yellow or Red preferred, but its your call)
  • 3 whole Sweet Onions (Vidalia)
  • 16 oz Mushrooms (Button, Baby Bellas or your favorite)
  • 1/4 cup Olive Oil
  • 1 Tbsp Kosher Salt
  • 1 tsp Cracked Black Pepper (More if you like it)

Instructions
 

  • Slice the peppers into bite sized chunks approximately 1 inch by 1 inch.
  • Peel onion the cut in half, then cut each half into 4 wedges.
  • Take the stems of the mushrooms then cut in 1/2 or 1/4 if they are big.
  • Place all vegetables in large bowl.
  • Add oil, salt and pepper.
  • Mix throughly and put into a grill basket.
  • Place the grill basket on the grill over low heat.
  • Grill for about 25 minutes mixing and flipping the vegetables multiple times.
  • When onions are translucent and peppers tender remove from grill and serve.
  • To get that char, turn up the heat for the last 5 minutes to medium-medium high.
