Easy Grilled Vegetables

This is my favorite way to eat vegetables! Simple, easy and delicious! Easy grilled vegetables add a smoky, sweet flavor to any summer veggie.

Ok I am not the biggest vegetable fan, but I am a huge fan of grilled vegetables. There is nothing easier than firing up the grill, cooking your favorite main like Grilled Flat Iron Steak, Tequila Lime Shrimp and grilling some of your favorite summer vegetables. This grilled vegetable mix is a basic pepper, onion & mushroom recipe, but you could add in zucchini, summer squash, and green peppers too! I recommend using yellow or red peppers which tend to be a bit sweeter and add a nice flavor to your vegetables. Even the kids will love them!

Grilling vegetables adds that sweet and smoky flavor that makes them hard to resist. Grill a little longer and get that char on each and every bite!

Best Vegetables to Grill

  • Green, yellow or red peppers: are packed with vitamins and minerals and loaded with health benefits. Plus they add a nice texture and the red and yellow peppers add a nice sweetness to your grilled vegetables.
  • Baby Bella Mushrooms: are loaded with a selenium: A mineral known for its antioxidant properties. Selenium may help to boost your immune system. Keep them whole or cut into quarters.
  • Zucchini: aid in eye health because they are rich in vitamin C and beta-carotene. Zucchini add a nice creamy texture to your veggies.
  • Vadalia onions: are low in calories but packed with vitamins, minerals and fiber. Vadalia onions are mild and add a nice sweet flavor, while not overpowering the other vegetables.
  • Cauliflower and broccoli: are both high in vitamin C which aids in bone formation, immune function, and wound healing. Grill in florets to add a crisp and charred flavor.

Grilling Tips

  • Cut the vegetables to approximately the same thickness so that they cook at the same rate.
  • Toss in a mixing bowl with oil, kosher salt and pepper. Always taste to see if seasoned well.
  • Place in a grill basket and stir frequently.
  • Start off the grill on low heat. Cook for about 20-25 minutes until tender. Turn up the heat to medium-medium high for the last 5 minutes to get that char.
  • Close the lid and check the progress regularly.

Slice your vegetables into quarters or halves depending on the size of your vegetable.

Cook on low heat, mixing and turning the vegetables frequently.

It takes about 20-25 minutes to get the onions transparent. Turn up the heat to medium-medium high for the last 5 minutes to get that char. Either serve your grilled vegetables immediately or put in a bowl and cover with foil to keep warm.

  • Grill
  • Grill basket or grill sheet


  • 2 whole Pepper (Yellow or Red preferred, but its your call)
  • 3 whole Sweet Onions (Vidalia)
  • 16 oz Mushrooms (Button, Baby Bellas or your favorite)
  • 1/4 cup Olive Oil
  • 1 Tbsp Kosher Salt
  • 1 tsp Cracked Black Pepper (More if you like it)


  • Slice the peppers into bite sized chunks approximately 1 inch by 1 inch.
  • Peel onion the cut in half, then cut each half into 4 wedges.
  • Take the stems of the mushrooms then cut in 1/2 or 1/4 if they are big.
  • Place all vegetables in large bowl.
  • Add oil, salt and pepper.
  • Mix throughly and put into a grill basket.
  • Place the grill basket on the grill over low heat.
  • Grill for about 25 minutes mixing and flipping the vegetables multiple times.
  • When onions are translucent and peppers tender remove from grill and serve.
  • To get that char, turn up the heat for the last 5 minutes to medium-medium high.
