Simple Penne alla Vodka
This family favorite Simple Penne alla Vodka combines tender penne pasta with a rich and delicious tomato, vodka and cream sauce, topped with fresh basil and parmesan cheese.

- 1 box penne pasta 16 oz
- 2 shallots finely chopped
- 2 cloves garlic crushed/pressed
- 1 tbsp olive oil
- 1 tbsp butter
- 1 cup chicken stock
- 1 cup vodka
- 28 oz can crushed tomatoes
- 14 oz can tomato sauce
- 1/4 tsp fresh ground pepper
- 1 pinch salt
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese
- 10 leaves fresh basil torn or roughy cut
Heat skillet over medium heat.
Add olive oil and butter.
Once butter is melted, add the shallots and garlic. Sauté for 3-4 minutes, stirring frequently.
Add vodka and simmer for additional 3-4 minutes until vodka has evaporated and it is reduced by about half.
Add chicken stock, crushed tomatoes, tomato sauce, salt and pepper. Bring to a bubble and then reduce heat to a simmer.
Cook pasta in salted boiling water per instructions on box for al dente.
When pasta is almost done, add cream and parmesan cheese to the sauce and mix well. Turn off heat.
Drain pasta and place in large bowl, add sauce and toss to coat. Sprinkle with basil and more parmesan if desired.
Serve immediately.
