Apple Pie Enchiladas

Apple Pie Enchiladas are an easy version of a hot apple pie. Cinnamon, apples, sugars and lemon juice are stuffed and baked in a flour tortilla drizzled with caramel sauce. Yum!

Apple Pie Enchiladas are an easy and delicious homemade spin on the apple pie but bundled nicely in an individual treat. Remember the McDonald’s Apple Pies? These enchiladas tastes just like them! They are made with fresh apples, granulated sugar, brown sugar, cinnamon, lemon juice and a pinch of salt mixed together and stuffed into a flour tortilla. Baked to perfection in the oven and served with a drizzle of caramel sauce. Add vanilla ice cream too!

These Apple Pie Enchiladas are the perfect fall treat that can be served for any gathering. Make them for Thanksgiving because your guests will love them!

Why should I make these Apple Pie Enchiladas?

Where should I start? There are a number of reasons why you should make these enchiladas. However, here are my top three…

  • Homemade treats are better: If you’re like me, I enjoy making homemade treats the whole family will love. Since apples can be found at the grocery stores all throughout the year, this dessert can be served anytime of the year!
  • Easier to make than apple pie: No need to make and/or struggle with rolling out pie crust. This dessert uses flour tortillas instead. Simply fill and roll into a neat treat!
  • Pretty dessert: This dessert is just pretty to look at and it tastes as good as it looks!

What ingredients do I need to make these Apple Pie Enchiladas?

  • Apples: I used Granny Smith Apples, but you can use any type of apples for this recipe. Use your favorite and simply peel and chop.

  • Granulated Sugar, Brown Sugar and Cinnamon: You can’t make an apple pie without adding sugar and cinnamon! Sugar adds nice sweetness and cinnamon accents the flavors and compliments the other ingredients in this recipe.
  • Flour: Helps to thicken the apple filling so you don’t get a runny mess!
  • Lemon Juice: There are two reasons to add lemon juice to your filling. It prevents the apples from discoloring and turning brown and the lemon juice provides some extra tartness to the apple filling.
  • Salt: Just a pinch of salt goes a long way! Salt helps to enhance the flavors and brings everything together.
  • Flour Tortillas: Without the flour tortillas you won’t have enchiladas! You can use any soft flour tortilla for this recipe. However, use ones that are at least 8-inches in diameter. Place them in the microwave for about 15-20 seconds. This will allow for easier rolling.

Apple Pie Enchiladas-Ingredients

Apple Pie Filling

  • 6 soft flour tortillas
  • 4 Granny Smith Apples
  • 2 tsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp flour
  • pinch of salt
  • 1/4 cup granulated sugar
  • 1/4 cup dark brown sugar (packed)

Sauce

  • 1/2 cup butter
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar

Instructions

  • Preheat oven to 350 degrees.
  • Grease baking dish with butter. Set aside.

Apple Pie Filling

  • Wash, peel and dice apples into small cubes. 
  • In a mixing bowl, combine apples, lemon juice, cinnamon, flour, salt, granulated sugar and dark brown sugar. Let stand for 5 minutes.

  • Microwave flour tortillas for 20-30 seconds. 
  • Place 1/2 cup of apple filling slightly off center of each tortilla.

  • Tuck in edges and roll up each tortilla tightly. Place seam side down in the baking dish. 

Sauce

  • In a sauce pan over medium heat, stir together butter, water, brown sugar and granulated sugar. 
  • Bring to a boil, stirring constantly, reduce heat and simmer for 5 minutes. Pour sauce over enchiladas and let stand for 30 minutes.

  • Bake for 45 minutes or until golden brown.

  • Serve warm and drizzle caramel sauce over the top. Add a scoop of vanilla ice cream if desired.
