My kids are always asking me to buy bananas. They love to eat them as a snack with peanut butter, put them in smoothies, or dip them in chocolate. However, it seems like every time I buy some, they forget about them. Once they are very ripe, they stay there uneaten until I am forced to bake something. So today was my lucky day! Time to bake something banana again!

Usually I make banana bread or muffins, but today I wanted to make a cake. I quickly checked the refrigerator to see what ingredients I had on hand. Thankfully, I had a bunch of ingredients I could use in a banana cake. I love using sour cream in cakes and luckily I had a container in the fridge. Sour cream is often used in cakes to add needed fat that gives the cake a rich and creamy texture. It also adds moisture, while keeping the batter thick. In addition, it helps the cake to bake evenly, giving it a nice and consistent color throughout.

Now that I had an idea of what I was going to make, I looked again in the refrigerator for something I could use for the frosting. I had a package of cream cheese so I decided on a cream cheese frosting for the cake. Moist cake? Cream cheese frosting? Sounds like a winning combination to me! Plus, I love my cream cheese frosting! It’s easy to make and so delicious!

Flour, banana, butter, baking soda, salt, sugar, egg, vanilla, sour cream.

Mash the banana and set aside.

Using a hand mixer, beat the butter and sugar until light and creamy.

Add the egg and beat.

Add the egg to the batter

Add sour cream, vanilla and beat.

Combine the baking soda and flour, add to mixing bowl and beat.

Lastly, add the mashed bananas and beat until smooth.

Pour into a 7×12 inch pan (shown) or a 9×9 inch pan sprayed with baking spray with flour.

Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cake should be a nice golden color. Cool completely before frosting.

Cream Cheese Frosting-Ingredients

Powdered sugar, butter, vanilla, cream cheese.

Using a hand mixer, beat the butter and cream cheese. (For best results butter and cream cheese should be room temperature. Take out of the refrigerator 1 hour before using).

Add the powdered sugar and vanilla.

Beat until smooth.

Cream cheese frosting

Add cream cheese frosting to the top of the cooled banana cake. Cut into bars, serve and enjoy! Optional: add pecan chips or coconut to the top of the cake for even more delicious flavor.

Ingredients
  

Banana Cake Bars

  • 1/4 cup butter salted
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/2 cup mashed bananas ripe

Cream Cheese Frosting

  • 8 oz cream cheese
  • 1/4 cup butter salted
  • 1 cup powdered sugar
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a 7×12 or 9×9 inch baking pan with baking spray with flour.
  • Mash banana and set aside.
  • Using a hand mixer, beat the butter and sugar until light and creamy.
  • Add the egg and beat.
  • Add sour cream and vanilla and beat until smooth.
  • Combine flour, baking soda and salt. Add to batter and beat until combined.
  • Lastly, add the mashed bananas and beat until smooth.
  • Pour into prepared pan.
  • Bake for 20-25 mintues or until a toothpick inserted into the center comes out clean. Cake should be golden brown.

Cream Cheese Frosting

  • Using a hand mixer, beat the butter and cream cheese.
  • Add powdered sugar and vanilla and beat until smooth.
  • Frost cake, once completely cooled.
  • Cut into bars, serve and enjoy!
  • Optional: Add pecan chips or toasted coconut to the top.
