Banana Coconut Martini

A match made in heaven! This banana coconut martini is sure to bring you to the islands. This martini, perfectly blended with fresh banana and coconut rum makes it irresistible!

So the Fourth of July is coming up soon and we have been experimenting with RED, WHITE and BLUE themed drinks and food. We have already created our RED, Strawberry Watermelon Martini (check it out) and now we have created the WHITE, with this banana coconut martini.

In my experiments using the blender, I grabbed a fresh banana, added some pineapple juice and coconut rum. Here goes nothing. I turned the blender on low-medium and blended until the banana was fully incorporated. Shaker filled to the top with ice, I took this mixture and poured it in. I let it stand for 2-3 minutes, gave it a vigorous shake and poured it into my martini glass. My husband seemed very skeptical so I decided to take the first sip.

As soon as it hit my taste buds, I knew it was a winner. Creamy and fresh with the right amount of banana to coconut. It was delicious! It brought me back the islands and right away and I knew that I wanted more! I am not a big drinker, but I do love an occasional martini and this one checked all the boxes. My husband and friends believe this is a winner too! So if you like bananas and coconut, then this one is for you!

Ingredients
  

  • 3/4-1 banana fresh
  • 2 oz coconut rum
  • 1 oz pineapple juice

Instructions
 

  • In a blender, add banana, coconut rum and pineapple juice.
  • Turn blender on low-medium and blend until banana is fully incorporated.
  • Pour over a shaker full of ice. Let sit for 2-3 minutes, shake vigorously, pour and enjoy!
