Chocolate Brownie Muffins

In my house, we girls love chocolate! Besides diamonds, isn’t chocolate a girl’s best friend? Let me tell you, in my house it is, that’s for sure! These chocolate brownie muffins are filled with loads and loads of chocolate. Each and every bite is chewy, gooey and delicious!

My oldest daughter Emma loves these muffins! I swear she has the biggest sweet tooth and I attribute it to my daily cookie eating while I was pregnant with her. Yes, every day on my way to work! Countless mornings, she has requested these muffins, even during school days when I was short on time. But they are so easy to make that her requests were and still are not often denied.

Do you love loads of chocolate? Do you love chocolate brownies? Then you have to try these muffins. Yes, you can eat brownies for breakfast, I swear I won’t judge! So come on, what are you waiting for? Try these chocolate brownie muffins to start off your day!

Chocolate brownie muffins with milk

Using a large mixing bowl, combine cocoa powder and baking powder and mix. Add boiling water and mix. Add melted butter and vanilla and mix well, until there are no lumps. Dump in sugar, keep mixing! Stir in eggs and mix until no yolk is showing. Add flour and salt and mix until all the ingredients are combined. Stir in chocolate chips! Don’t forget to mix! We always add in more chips because more chocolate=more goodness!

Pour batter into a paper lined muffin pan filling 3/4 of the way full. Sprinkle sugar on top.

Bake at 350 degrees for 20 minutes, then check muffins with a toothpick.

If the toothpick comes out mostly clean then the muffins are done! Do not over bake. Let cool for 5 minutes and eat quickly because they won’t last!

  • Large Mixing Bowl
  • Muffin Pan

Ingredients
  

  • 3/4 cup baking cocoa
  • 1 tsp baking powder, heaping
  • 1.5 sticks butter, melted
  • 1/2 cup boiling water
  • 1 Tbsp vanilla
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 1 1/2 cup chocolate chips add more for even more chocolate

Instructions
 

  • Preheat oven to 350 degrees
  • Line a muffin pan with liners
  • In a large bowl, combine cocoa and baking powder, mix
  • Add boiling water and mix
  • Add melted butter and vanilla, mix well until no lumps
  • Add sugar, mix well
  • Stir in eggs and mix until combined and no yolk is showing
  • Add flour and salt and mix until all the ingredients are combined
  • Stir in chocolate chips
  • Spoon/pour into muffin pans, filling about ¾ to top
  • Sprinkle sugar on top
  • Bake for 20 minutes. Insert a toothpick, if toothpick comes out mostly clean then the muffins are done.  If not put back in for a few minutes more.  Do not overbake!
  • Cool and then devour!
