I enjoy making cookies. Bar cookies, drop cookies, cut-out cookies. Plain and simple, cookies are one of my go-to desserts. They are easy to make and easy to serve to your guests. In addition, who doesn’t like a good cookie? What I like about bar cookies is that you can make them in one batch, unlike drop cookies that take several batches to complete.

These Delicious Almond Toffee Bars start off with a super easy base of oats, dark brown sugar, flour, baking soda, salt, finely chopped almonds and melted butter. Mix the ingredients together, press into your pan and bake until golden brown. About 10-15 minutes. The toffee-like flavor comes from using dark brown sugar, instead of granulated sugar. While your base is baking, just combine 2 tablespoons of butter and one can of condensed milk and heat over medium heat in a small sauce pan until slightly thick. Place on top of your base and bake for an additional 15 minutes or until golden brown. Once out of the oven, sprinkle the chocolate chips over the warm bars. Let sit and melt for a minute or two. Then spread the melted chocolate chips over the top. Cool, refrigerate, cut into 1-1.5 inch bars, serve and watch them disappear!

Baking soda, salt, oats, flour, pure vanilla extract, dark brown sugar, almonds (finely chopped), sweetened condensed milk, butter and semi-sweet chocolate chips.

Instructions

Preheat oven to 350 degrees. Spray pan with baking spray with flour. In a small food processor, chop the almonds until fine. In a large mixing bowl, combine flour, oats, dark brown sugar, almonds, baking soda and salt. Set aside.

In a small saucepan, melt 6 tablespoons of butter. Pour into mixing bowl.

Mix all the ingredients together.

Press into prepared pan. Bake 10-15 minutes or until golden brown.

In the meantime, in a small saucepan add the other 2 tablespoons of butter and one can of condensed milk. Over medium heat, stir until the mixture thickens, about 12-15 minutes.

Remove from heat and stir in pure vanilla extract.

Pour over the baked crust and return to the oven. Bake for an additional 12-15 minutes or until the edges start to lightly brown.

Remove from oven, immediately sprinkle chocolate chips over the top. Let sit for 2 minutes.

Cool completely. Once cooled, chill thoroughly. Cut into bars.

Serve and enjoy! Store in an airtight container for up to three days. To freeze: place in an airtight container with wax paper between layers for up to three months.
