Chocolate Frosting-for one loaf

  • 3 oz butter (softened)
  • 4 oz unsweetened Baker’s chocolate (melted)
  • 1 1/2 cups powdered sugar
  • 1 tsp pure vanilla extract
  • 2-3 tbsp milk (add one tbsp at a time)

Double Chocolate Zucchini Bread-Instructions

  • Preheat oven to 350 degrees.
  • Spray bread pans with baking spray with flour. 
  • Whisk together flour, salt, baking powder, baking soda, and cinnamon. Set aside.
  • Wash zucchini and cut off the ends. Using the large hole side of a grater, shred the zucchini. Place in a bowl and set aside. 
  • In a small pan, melt Baker’s chocolate. Set aside. 
  • Using a hand mixer, beat the eggs and sugar until light and fluffy. Add in pure vanilla extract, oil and melted chocolate and beat until incorporated. 
  • Pour in dry ingredients and beat until combined. Batter will be very thick.
  • Stir in zucchini and chocolate chips. 
  • Pour into prepared bread pans spreading evenly.
  • Top with chocolate chips if desired.
  • Bake for 45-60 minutes or until a toothpick inserted into the center comes with a few moist crumbs. 
  • Let the bread sit in the pan for 5 minutes. Remove the loaves and move to a wire rack to cool completely.
