My family and I love mixing it up especially when it comes to our sides. We LOVE potatoes, all kinds of them; Grilled Parmesan Potato Wedges, Ultimate Twice Baked Potatoes, Potatoes Au Gratin, etc. However, these Easy Red Roasted Potatoes are just that; EASY to make, easy to bake and are easy to eat! Just wash, cube, drizzle with oil and season and they are ready to pop into the oven. Set you timer and within about 30-45 minutes you’ll have a great potato side that goes with every main dish.

What are Red Potatoes?

As the name indicates, red potatoes have distinctive red skins and are usually smaller than most potatoes. The skin of these potatoes are thin (no need to take off the skin!) and the insides have a white flesh that is firm and waxy. When cooked, they are moist, smooth and creamy. Yum!

In addition, red potatoes are often called summer potatoes or new potatoes because they arrive in grocery stores soon after they are harvested. So if you are looking for one of the freshest potatoes, red potatoes are it!

What Type of Oil Should I Use to Toss the Potatoes In?

We pretty much always use olive oil when roasting our potatoes. However, vegetable oil and canola oil will work perfectly well. These types of oils render a crispy outside leaving the inside perfectly moist and creamy. In addition, these oils are pretty neutral in flavor allowing the potato flavor to come through.

What Types of Seasoning Should I Use?

After a nice drizzle of oil, season your potatoes liberally with salt, fresh ground black pepper and other seasonings like onion powder, garlic powder, paprika and/or even a little cayenne if you want to add a little heat. For this recipe we used salt, pepper and garlic powder. Experiment with different types of seasoning and see what ones you like best.

Red Roasted Potatoes-Ingredients

  • 3 lbs red potatoes washed and cubed
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 425 degrees. 
  • Wash and cube potatoes.
  • Place potatoes in a mixing bowl. Drizzle oil over the potatoes and toss to coat.
  • Season potatoes with salt, fresh ground black pepper, and garlic powder. Toss to coat.
  • Spread on roasting pan in an even layer.
  • Bake for 30-45 minutes or until the potatoes are golden brown on the outside. Toss potatoes occasionally for even cooking.
  • Serve and enjoy!
