Green Beans with Shallot and Lemon is a great side that goes with salmon, chicken, beef, and lamb dishes. The lemon and shallot flavor really shines through! Check out our Grilled Salmon that is a perfect main to this side.

Prep

Before you get started on this side, it is always a good idea to prep ahead of time. The beans need to be quickly trimmed, the shallot minced, the lemon zested and the parsley chopped. Prepping ahead of time saves time in the long run.

  • Trim the beans: use a knife to slice off the sting (stem) ends of the beans or use your hands and break off the ends.
  • Mince the shallot: use a mincer or a sharp knife and mince the shallot.
  • Zest the lemon: use a zester to zest the lemon. Gently use the sharp end of the tool and run it along the lemon. Do not go over the same area more than once or you will hit the pith (the white part that has no flavor).
  • Chop the parsley: Use a kitchen knife or a sharp knife and finely chop the parsley.

Green Beans with Shallot and Lemon-Ingredients

  • 1 1/2 lbs green beans
  • 1 shallot
  • 2 tbsp olive oil
  • 1 tsp lemon zest (fine)
  • 1 tbsp parsley (finely chopped)
  • salt and fresh ground pepper (to taste)

Instructions

  • Fill a large sauce pan with water 3/4 way full. Add one tsp of salt and bring to a boil.
  • Add the beans and cook until bright green and tender about 7-10 minutes. 
  • Drain the beans and plunge them into an ice bath to stop the cooking. Drain well and set aside.
  • In a sauté pan over medium heat, add the olive oil and heat. Add the shallot and sauté until softened, roughly 2-3 minutes. 
  • Raise the heat to medium-high and add the green beans. Sauté until they just begin to brown, about 2-3 minutes. Stir in lemon zest and cook until combined, roughly 30-60 seconds. 
  • Remove from heat. Salt and pepper to taste.
  • Transfer the green beans to a serving bowl or dish and garnish with parsley.
  • Serve immediately.
