At the end of September my Carolina Reaper plants were loaded! My jalapeño plants were nearing its end rendering some ripe, red peppers. Yes, at the end of the season, jalapeños turn red. In order to use up some of those hot peppers, I decided to make this Mango Hot Pepper Sauce and today I am sharing the recipe.

This Mango Hot Pepper Sauce uses three different kinds of hot peppers. Carolina Reapers, habaneros and jalapeños. If you are unfamiliar with hot peppers then let me fill you in. Hot peppers are measured on the Scoville Heat Scale in Scoville Heat Units. In simple terms, this scale measures the pungency or heat of hot peppers. Carolina Reapers are currently the hottest peppers in the world, according to the Guinness Book of World records. These chili peppers score 2.2 million Scoville Heat Units (SHU). That is one dangerously HOT pepper! Habaneros on the other hand score between 100,000-350,000 SHU, which is considered very hot. And lastly, jalapeños are just 2,500-5,000 SHU, which to me, is a pretty mild-medium pepper.

If you do not have access to Carolina Reapers, or you would like to take the heat level down a notch, you can always substitute them for ghost peppers (1 million SHU), cayenne peppers (30,000-50,000 SHU) or chipotle peppers (2,500-8,000 SHU). Use what peppers you like and are easily found at your local grocery stores.

What does this sauce taste like?

In addition to the hot peppers, this sauce uses fresh mangos, mango pineapple juice and lime juice that add a nice sweetness to this sauce. Mangos are referred to as the “king of fruit” because it tastes like combination of pineapples, oranges and peaches. At first taste, this sauce is fruity, citrusy and nice and sweet. Within about 5-10 seconds, the heat starts to set in, giving your lips that tingle and burn. This sauce is great on chicken, fish or shrimp. In addition, you can add it to salsas and condiments to spice things up!

Safety Advice

  • Wear Gloves:  It’s always a good idea to wear gloves when working with hot peppers. Hot peppers contain oils that can cause burning sensations on your skin.
  • Don’t Touch Your Eyes: Never touch your eyes while working with hot peppers, it will NOT BE GOOD! If you do get it in your eyes, flush them out with lukewarm water for about 10-15 minutes. If this does not give any relief, flush the eyes out with milk.
  • Avoid the Fumes: Make sure you work in a well ventilated area, open doors and windows. Beware of the fumes as they may make it difficult to breath and or/see.

Storage and Shelf Life

I recommend you store this sauce in serialized bottles, mason jars or other air tight containers. It should last up to 2-3 months if kept in the refrigerator. If there are any signs of mold or if the sauce smells bad then throw it away. This sauce will last even longer if it is properly canned.

Mango Hot Pepper Sauce-Ingredients

  • 8 habaneros washed, (sliced in half)
  • 4 Carolina Reapers washed, (sliced in half)
  • 4 jalapeños washed, (sliced in half)
  • 1/2 vidalia onion
  • 6 cloves garlic
  • 1 cup white vinegar
  • 6 oz pineapple mango juice or pineapple juice (small can)
  • 1/4 cup lime juice
  • 1/4 cup water
  • 2 mangos (peeled and cut)
  • 1/2 tsp salt
  • 1/2 tsp paprika

Instructions

  • Preheat oven to 400 degrees.
  • On a large baking sheet lined with non-stick foil, add habaneros, Carolina Reapers, jalapeños, onion and garlic.
  • Bake for 20 minutes.
  • Add peppers, onion, garlic, white vinegar, pineapple mango juice, lime juice, water, mangos, salt and paprika to a blender. Blend until smooth.
  • Pour into sterilized bottles, mason jars, or air tight containers.
  • Store in the refrigerator for 2-3 months. Discard if sauce smells bad or has signs of molding. 
  • Enjoy!
