I always keep frozen chicken in the freezer. Chicken is my go-to meal, especially on busy nights, which in my house, is every night. I like thin chicken breasts. It’s easier and quicker to cook and for some reason, it just tastes better! Click here for the proper way to handle and thaw out chicken.
The other thing I always have in the pantry is Italian seasoned panko bread crumbs. Super easy to use and no need to add salt or pepper! Lastly, I always have shredded cheddar cheese in the fridge. We use it all the time and it’s in this quick baked chicken too!
Quick Baked Chicken-Ingredients
- 6-8 pieces chicken
- 2 cups Italian seasoned panko bread crumbs
- 1 cup extra sharp cheddar cheese
- 1/2-1 cup oil extra virgin
Quick Baked Chicken-Instructions
Grab two medium sized bowls. Add oil, (I use extra virgin oil) to one bowl. For the other bowl, add the Italian seasoned panko bread crumbs and one cup of shredded cheddar cheese. Mix.
Dip your chicken in the oil, coat both sides.
Dip the chicken in the bread crumbs and cheese. Coat both sides.
Place in a baking dish. Optional: top with more more crumbs and sprinkle cheese on top.
Bake at 350 degrees for 20-30 minutes or until your thermometer reads an internal temperature of 165 degrees. For thick chicken breasts cook for 35-45 minutes or to 165 degrees. I cook mine to about 170 degrees.
Serve with your favorite BBQ sauce or dressing.
