  • 3/4 cup feta (crumbled)
  • 1/2 cup mozzarella (shredded)
  • 1 green onion (chopped)
  • 1/2 tsp garlic salt
  • 1/8 tsp fresh ground pepper

  • Line the baking sheet with parchment paper and set aside.
  • Thaw, drain and squeeze excess water from the frozen spinach. 
  • Thaw puff pastry according to package directions. Gently roll out the puff pastry on a lightly floured board to combine the seams.
  • In a small bowl whisk together the egg and milk. Brush the egg wash over puff pastry.
  • Combine feta, mozzarella, onion, garlic salt and pepper. Spread mixture evenly over the puff pastry and then top with spinach. 
  • Starting with the short side, roll up the pastry into a log.
  • Slice the log into ½-¾ inch slices and place them onto the prepared backing sheet.
  • Brush the slices with the egg wash.
  • Bake for 18-20 minutes or until they are golden brown and puffed.
