Rhubarb Simple Syrup
- 1 cup granulated sugar
- 1 cup water
- 1/2 cup rhubarb (diced into 1/4 inch pieces)

- .5 oz lemon juice (freshly squeezed)
- .5 oz Vermouth (white)
- 1.5 oz Vodka

- Once it reaches a boil, reduce to a simmer and cook for 10 minutes.
- Remove from heat. Take the back of a spoon and gently crush the softened rhubarb to squeeze the juice out. Let cool.
- Once cooled, strain the syrup to remove any solids, ensuring a smooth and velvety consistency.
- Store in an air tight jar in the refrigerator for up to one month. Discard if the syrup smells or starts to spoil.

- In a cocktail shaker, muddle the strawberries.
- Add ice, rhubarb simple syrup, lemon juice, Vermouth, and vodka.
- Shake vigorously, 10-15 seconds, until cold.
- Double strain into a cocktail glass filled with ice.
