For this recipe, I used red stalks to create a nice red colored drink.

Additionally, you’ll need seltzer water or club soda to provide the spritz’s refreshing effervescence. Add in a little fresh squeezed lemon juice too for some extra tang. Lastly, this spritz uses Vermouth and vodka to create a delicious adult beverage. Vermouth is a red or white wine flavored with herbs and spices creating fruity and floral undertones. Vodka is a clear distilled liquid that is used in many cocktails.

Rhubarb Simple Syrup

  • 1 cup granulated sugar
  • 1 cup water
  • 1/2 cup rhubarb (diced into 1/4 inch pieces)

  • 1/3 cup fresh strawberries (sliced)
  • 1 oz rhubarb simple syrup
  • .5 oz lemon juice (freshly squeezed)
  • .5 oz Vermouth (white)
  • 1.5 oz Vodka
  • top off with seltzer water

Step-by-Step Instructions

Rhubarb Simple Syrup

  • In a small saucepan, combine sugar, water and rhubarb.
  • Bring to a boil over medium-high heat, stirring regularly.
  • Once it reaches a boil, reduce to a simmer and cook for 10 minutes.
  • Remove from heat. Take the back of a spoon and gently crush the softened rhubarb to squeeze the juice out. Let cool.
  • Once cooled, strain the syrup to remove any solids, ensuring a smooth and velvety consistency.
  • Store in an air tight jar in the refrigerator for up to one month. Discard if the syrup smells or starts to spoil. 

Strawberry Rhubarb Spritz

  • In a cocktail shaker, muddle the strawberries.
  • Add ice, rhubarb simple syrup, lemon juice, Vermouth, and vodka. 
  • Shake vigorously, 10-15 seconds, until cold. 
  • Double strain into a cocktail glass filled with ice.
  • Top with seltzer water and stir gently. 
  • Add a strawberry to the rim of the glass for garnish.
  • Serve and enjoy!
