A few weeks ago, we were off again for one more summer vacation. This time our destination was Ocean City, NJ. As a kid, my family and I would go to the Jersey Shore for several weeks in the summer. When my younger brother was just one year old, my dad packed up the station wagon and off we went. After my husband and I got married, we kept the tradition going and every year we spend a few weeks there.
As you know, when you go on vacation, you need to use up things in your fridge, pantry, freezer, etc. So these banana cupcakes are from the overripe bananas that I needed to use up before we left.
If you have tried my Banana Coconut Martini, I LOVE these delicious flavors together! So today, I am sharing with you these rich and moist cupcakes, topped off with a creamy, coconut butter cream cheese frosting! They are too delicious to resist!
These cupcakes are super easy and beginner friendly. Are you ready? Let’s get started!
Banana Cupcakes with Coconut Cream Cheese Frosting-Ingredients
Flour, sugar, baking soda, salt, sour cream, butter, eggs, vanilla, bananas.
Preheat oven to 350 degrees. Using a stand mixer with a paddle attachment or a hand mixer, cream the butter and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each.
Add pure vanilla extract and sour cream. Beat until combined.
Mix the dry ingredients together, add to mixing bowl and beat until combined.
Stir in the mashed bananas.
Spoon batter into prepared cupcake pan, filling 3/4 way full.
Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool completely before frosting. Frost with Coconut Cream Cheese Frosting (see recipe below) and these cupcakes are to die for!

- 1/2 cup butter
- 1 cup sugar
- 1 1/2 tsp pure vanilla extract
- 1 cup sour cream
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups bananas mashed
Instructions
- Preheat oven to 350 degrees.
- Prepare cupcake pans with liners.
- Using a stand mixer with the paddle attachment or a hand mixer, beat the butter and sugar until light and fluffy.
- Add eggs, one at a time, beating after each.
- Add pure vanilla extract and sour cream. Beat until combined.
- Mix the dry ingredients together, add to mixing bowl and beat until combined.
- Stir in the mashed bananas.
- Spoon batter into prepared cupcake pan, filling 3/4 way full.
- Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean.

Coconut Cream Cheese Frosting

Ingredients
- 8 oz cream cheese softened
- 1/2 cup butter softened
- 2 cups powdered sugar
- 1/2 tsp pure vanilla extract
- 2 tsp coconut extract
Instructions
- Using a hand mixer, beat cream cheese, butter, powdered sugar, vanilla and coconut extracts until creamy.
- Spread/pipe frosting over cake, cupcakes, etc.
