This creamy Cottontail Cocktail is perfect for Easter! A delicious whipped cream, coconut flavored cocktail, topped off with a cute tail!
Easter is just around the corner and that means a basket full of your favorite chocolate bunnies, jelly beans and marshmallow cream eggs. There are so many ways to celebrate Easter and in my house, we start the day off with finding all the Easter eggs the Easter Bunny left for the kids. After my kids, scream and race around the house seeing who can find the most eggs, we settle down, make ourselves sick eating all the candy and then gear up for an eggs-travaganza Easter dinner!
If you haven’t satisfied your sweet tooth (is there such a thing?), then this Cottontail Cocktail is the perfect cocktail before or after dinner. It’s so good have one before and after dinner!
Cottontail Cocktail-Ingredients
Whipped cream vodka: A key ingredient in this cocktail. I first discovered whipped cream vodka when I used it in my Whipped Root Beer Float, sorry kids, this is for adults only! Whipped cream vodka mimics the taste of whipped cream by combining vanilla and other cream flavors. To me, whipped cream vodka has a less medicine like flavor than vanilla vodka, and the reason I use it in my drinks often.
Coconut Rum: A light rum with the most delicious coconut flavor. Often used in tropical drinks combined with pineapple juice.
Half and half: a mixture of equal parts of whole milk to cream. Makes this drink smooth and creamy!
Cream of Coconut: A thick, sweet form of coconut milk. Similar to simple sugar, it has a rich coconut flavor. Most often used in drinks and desserts.
Pineapple Juice: A liquid extracted from the pulp of a pineapple. Most often found in tropical drinks. Pairs well with coconut rum.
Marshmallow Topping: My absolute favorite ice cream topping with Smucker’s as my favorite brand. It’s creamy, sweet and pairs well with coconut. Great for rimming cocktail glasses.
Sweetened Shredded Coconut: Great for this cocktail because it resembles the fur of a bunny! It’s white color and delicious taste works perfectly with all the flavors of this cocktail.
Marshmallow: Perfect garnish for the “cottontail” that is added to the rim of the glass.
Instructions
- Add one teaspoon of marshmallow topping to a shallow dish. Rim the edge of a coup or martini glass with the marshmallow topping.
- In another shallow dish, add sweetened coconut. Dip the rimed glass into the coconut.
- Make a small cut in one marshmallow and place it on the edge of the glass.
- In a cocktail shaker filled with ice, add whipped vodka, coconut rum, half and half, cream of coconut and pineapple juice.
- Shake vigorously until very cold.
- Strain into prepared coup or martini glass.

This cocktail is perfect for Easter! However, skip the marshmallow “cottontail” and make it for any Spring or Summer gathering. It’s creamy, tropical and absolutely delicious!

- coup or martini glass
- Cocktail Shaker
Ingredients
- 1.5 oz whipped cream vodka
- 2 oz coconut rum
- 2 oz half and half
- 1/2 oz cream of coconut
- splash of pineapple juice
- marshmallow topping, sweetened shredded coconut and marshmallow for the rim of the glass
