Spring is in the air! This Easy Grasshopper Pie can be made ahead of time. It only takes about 10 minutes to whip up. Just put in in the freezer and pull it out after you eat your boiled corn beef dinner! A delicious way to end a delicious meal!
Growing up Italian, I never had the traditional corn beef dinner on St. Patrick’s Day. It wasn’t until I married Jim, who is part Irish, that I had my first corn beef dinner with his family. The first thing he said is that I shouldn’t get my hopes up too high, it’s just a boiled dinner. Everything goes in a big pot, boiled, plated and eaten. However, I LOVED it and look forward to this meal every year!
This year, I am going to be bringing this Easy Grasshopper Pie for dessert. It’s simple to make, tastes delicious and after all, it’s green!
How do I make Grasshopper Pie?
First, crush up 2 cups of Oreos, chocolate graham crackers or chocolate wafers. Add 2-3 tbsp of melted butter and mix together. Press onto the bottom of a 9 inch pie plate. However, if you want to save time, as I did in this recipe, buy an already prepared chocolate pie crust in the baking isle of your grocery store. Next, add some softened mint chocolate chip ice cream to the pie crust and spread evenly. If you don’t like mint chocolate chip ice cream, just add some green food coloring to vanilla ice cream. Lastly, spread cool whip oven the mint chocolate chip layer and top with your favorite toppings!

There are many ways to dress up this dessert for St. Patrick’s Day, so be creative. Experiment with different toppings and see what you like best. I am using a combination or mini-chocolate chips, and some mini-green M&M’s. You can also use crushed up Oreos, chocolate graham crackers, chocolate shavings, etc.

- chocolate pie crust
- cool whip
Toppings
- crushed Oreos, chocolate gram crackers or chocolate wafers
- mini-chocolate chips
- green sprinkles, M&M’s, or St. Patrick’s Day sprinkle mix
- green sugar
- chocolate shavings
- chocolate sauce
Easy Grasshopper Pie-Instructions
- Crush Oreos, chocolate graham crackers or wafers (2 cups crushed) and add to a mixing bowl.
- Add melted butter and mix together.
- Press into a 9 inch pie plate OR use a prepared chocolate pie crust.
- Spread softened ice cream onto the bottom of the crust.
- Freeze for 3 hours.
- Remove from freezer 15 minutes before serving. Top with cool whip or whipped cream. Add desired toppings.
- Cut into slices, serve and enjoy!
