This Easy Summer Corn Caprese Salad actually came about totally by accident. One day, after Jim grilled some salmon, I needed a quick and easy salad to go along with it. I looked in the pantry and found a can of sweet corn. In the fridge, I had a pint of sweet tomatoes and a package of fresh mozzarella balls. Lots of color, lots of flavor! So I dumped all the ingredients in a large bowl, salted, peppered, drizzled oil, and took what I thought was balsamic vinegar and drizzled that too! Mixed it all together and plated it. Looks good right? However, when I tasted it, it wasn’t exactly what I was expecting!

By accident, I had grabbed the coconut white balsamic vinegar! Not the traditional balsamic I thought I had grabbed. However, this salad went perfectly with the grilled salmon! Tons of flavor, lots of color and texture. The mozzarella melted in your mouth, while the corn gave it a little crunchiness, and the tomatoes bursted with flavor in your mouth. Combined with the coconut? It was a true and unexpected winner! Actually, one of my new favorite summer salads!

Easy Summer Corn Caprese Salad-Ingredients/Instructions

The ingredients are super simple, fresh and delicious! Add One 15.25 oz can of sweet corn, drained. One pint of sweet cherry tomatoes, washed and halved. One 8 oz package of fresh mozzarella balls to a large bowl. Depending on size, you may want to cut them in half or a little smaller. Whatever works for you! Lastly drizzle on both your coconut white balsamic vinegar and olive oil. Salt and pepper. Mix together, refrigerate for several hours and enjoy!

Where do I get the coconut white balsamic vinegar and olive oil?

When Jim and I lived in Boston we would walk just a few blocks to the Boston Olive Oil Company. They have the most delicious oils and vinegars! Each with their own distinct flavor. Our favorite vinegars? The Traditional Balsamic that is rich and sweet with very low acidity. It’s a delicious vinaigrette for greens and amazing drizzled on fruit, ice cream and cheese. The Coconut White Balsamic Vinegar (used in this Easy Summer Corn Caprese Salad) has a rich coconut flavor and is amazing on fish, shrimp and chicken. Drizzle on your favorite rice or grain dish, or over watermelon for a refreshing treat.

Our favorite olive oils? The Chiquitita is mild, delicate, sweet, with pleasant notes of almond and berry, no bitterness, and a delightful fruity finish. Another favorite oil? The Basil Infused Olive Oil is rich in basil flavor and goes great on traditional caprese, breads, vegetables and pastas.

Ingredients
  

  • 1 15.25 oz can of corn sweet corn
  • 1 pint cherry tomatoes
  • 1 8 oz package of fresh mozzarella balls
  • 2 tbsp coconut white balsamic vinegar
  • 2 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper freshly ground

Instructions
 

  • Drain can of sweet corn.
  • Wash and half cherry tomatoes.
  • Cut mozzarella balls in half or smaller if desired.
  • In a large bowl, add sweet corn, cherry tomatoes, mozzarella balls, coconut white balsamic vinegar, olive oil, salt and pepper. Mix together.
  • Refrigerate for several hours.
  • Serve and enjoy!
