I’m all about St. Patrick’s Day right now! All things food and drink related to this day are on my list of things to make and post. Just check out our Corned Beef Reuben Egg Rolls and Rueben Dip that are a great appetizers to start off your St. Patrick’s Day Celebration.

However, right now I’m all about the “green.” Green food, green drinks and green cookies! These Mint Kiss Blossom Cookies are perfect for St. Paddy’s Day. In addition, make them for that cookie exchange at Christmas too! Over the holidays, I bought a few bags of these Hershey’s Kisses Mint Truffles and I have been saving them for these cookies These cookies start off with a simple mint sugar cookie topped off with a Hershey’s Kisses Mint Truffle. If you have never seen these, they are dark chocolate kisses filled with a green, minty truffle inside. Sounds good, right? They are and are even better when sitting atop these delicious, green cookies!

Reasons why you’ll love these Mint Kiss Blossom Cookies

Great for the holidays!

Because of their bright green color, these cookies are perfect for Christmas or St. Patrick’s Day. They make a nice addition to any cookie tray or dessert platter. In addition, enjoy these nice minty treats after that boiled Irish dinner.

Easy to make!

These cookies are so easy to make! The dough can be whipped up in about 10 minutes. Roll into balls then cover with green decorating sugar (coarse sugar) then bake. Let the kids make them!

Have a nice minty flavor!

These cookies have a nice, fresh, minty flavor. If you would like a more bold, minty cookie just add more mint extract. In addition, these cookies are topped with a delicious Hershey’s Kisses Mint Truffle. The truffle is like the icing on top of the cake!

Not a fan of mint?

If don’t like mint, no worries! Change the Hershey’s Kisses and swap out the extracts to fit your unique flavor profile. Experiment and see what combination you like best.

Tips for making the best Mint Kiss Blossom Cookies

  • Use room temperature butter. Let the butter stand at room temperature about 1-2 hours before using. Butter should not be too soft but rather cool to the touch. Press your finger down on the butter. Your finger should leave a little dent but not sink too far down. In addition, the butter should not be too greasy or shiny. 
  • Use a combination of butter and vegetable shortening. For these cookies, I use both butter and vegetable shortening. Butter adds great flavor to the cookies, but often produces flat cookies that spread. Shortening adds structure without adding flavor. So the two work perfectly together to make a great cookie!
  • Invest in good equipment. I use the Kitchen Aid Artisan Series 5 Stand Mixer. If you bake a lot, it’s worth the money. In addition, I highly recommend investing in these Doughmakers Cookie Sheets. They are the BEST sheets you will ever use. The aluminum, patented, pebble patten, allows the cookie sheet to heat up quickly and evenly, as well as cool down quickly. In addition, the sheets allow for even air flow and browns cookies perfectly. The cookies are so easy to release directly from the sheet without having to use non-stick coatings or parchment paper.
  • Use a 1-inch cookie scoop. Using a cookie scoop ensures that your cookies are round and even in size, while enabling the cookies to bake at the same rate. Push out the dough and use your hands to roll into small balls for these cookies.  
  • Don’t over bake!  Overbaking creates hard, dry cookies. In my opinion, it’s better to underbake them. If a recipe calls for 10 minutes, at the 9 minute mark, take a look at them. If they are just starting to brown around the edges, take them out. Another way to tell if your cookies are just about done is to press your finger down lightly on the cookie, if it leaves a little dent, then they are probably done.
  • Let the cookies cool for 5 minutes. Before pushing the Hershey’s Kisses into the cookie, let the cookies cool on the baking sheet for 5 minutes, then gently press the kiss into the cookie. This will help to ensure that the kiss won’t melt and deflate. After the kiss is added, move the cookies to a wire rack and let cool completely.
  • Invest in a wire rack: Wire racks allow the air to circulate, help the cookie cool quickly, and eliminate carry over baking.

Mint Kiss Blossom Cookies-Ingredients

  • 1/2 cup butter (softened)
  • 1/4 cup vegetable shortening
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1/2 tsp mint extract
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • green decorating sugar
  • 1 bag Hershey’s Kisses Mint Truffles

Instructions

  • Preheat oven to 350 degrees
  • Use Doughmaker’s Baking sheets or line two regular baking sheets with parchment paper.
  • Using a stand mixer with the paddle attachment or a hand mixer, cream butter, vegetable shortening and sugar.
  • Add eggs, pure vanilla extract and mint extract. Beat until combined.
  • Add flour, baking powder and salt. Beat until a soft dough forms.
  • Gather dough and roll into 1-inch balls. Roll in green decorating sugar and place on the baking sheet.
  • Bake for 10-12 minutes, remove from the oven and let cool for 5 minutes on the baking sheet.
  • Lightly press the Hershey’s Kisses Mint Truffles on the top of each cookie.
  • Move cookies to a wire rack and let cool completely.
  • Serve and enjoy!

How to store and freeze these cookies

Store the cookies in an airtight container for 3-5 days. To freeze, store in an airtight container for up to three months. Place wax paper between layers.
