If you love Reubens, then you are going to love this Reuben Dip! This hot, delicious dip can be whipped up in minutes then baked and served!
Recently, my family and I have had a love affair with Reubens. Just try our Corned Beef Reuben Egg Rolls. They are sure to get you hooked on air fryers! However, today we are sharing with you this Reuben Dip. Just whip it up in a few minutes and bake! Short on time? Make it a day or two ahead of time and place it in the refrigerator. Take out, bake and serve! This dip is basically a deconstructed Reuben sandwich. It’s rich, savory and tangy and your guests will LOVE it! I recommend doubling this recipe if you are serving it to more than 8 people. I served mine this past weekend and it was a huge hit!
What’s in the Reuben Dip?
- Corned Beef: preferably fresh is best. Boil or bake your own. In addition, get it sliced from the deli. Probably the easiest and least time consuming. Chop it and then add it to the dip.
- Shredded Swiss Cheese: you can’t leave out the cheese! Swiss cheese adds a smooth, sweet, mild, nutty flavor to the dip.
- Sauerkraut or “sour cabbage” as it is sometimes referred to is fermented cabbage. Sauerkraut adds a crunchy texture while providing a sweet and spicy flavor.
- Thousand Island Dressing is made with chopped pickles adding a sweet, tangy, crunchy and creamy flavor that goes perfectly with this dip.
- Cream Cheese and Sour Cream provides a great base to this dip while adding a creamy and tangy flavor.
Reuben Dip-Ingredients
- 8 oz cream cheese (softened)
- 1/2 cup sour cream
- 1/2 cup Thousand Island Dressing
- 1/2 lb. deli corned beef (chopped or shredded)
- 1 1/2 cups shredded Swiss cheese (reserve 1/2 cup for the top)
- 1 cup sauerkraut
Instructions
- Preheat oven to 350 degrees.
- Chop corned beef into 1 inch strips or shred. Set aside.
- Drain sauerkraut well, squeeze out excess water. Set aside.
- Using a hand mixer, beat cream cheese until smooth and creamy.
- Slowly add in sour cream and beat well.
- Add Thousand Island Dressing, Swiss cheese and sauerkraut and mix until blended.
- Stir in corned beef.
- Spread into a baking dish.
- Bake for 30 minutes, add 1/2 cup of the remaining Swiss Cheese to the top. Bake and additional 5-10 minutes, until hot and bubbling.
- Serve immediately with a variety of dippers.

Tips/Variations
- For large gatherings double or triple the recipe. This dip is so good and will go fast!
- Use pastrami instead of corned beef if you want a more smokey and flavorful dip.
- For a spicer flavor, add 1/2 cup of salsa and/or 1/2 to 1 tsp of cayenne pepper to the dip.
- Short on time, looking for a quicker cook? Add all the ingredients to a stove top pan and cook over medium heat until all the cheese melts and the dip is hot. Or microwave for 5-8 minutes until hot and bubbly.
- Not short on time? Add all the ingredients to a slow cooker and cook on low for 4-6 hours or high for 2-4 hours.
Serve this Reuben Dip with the following:
- Pumpernickel sticks
- Toasted marble rye cut into strips
- Triscuits or other hard crackers
- Taco chips
- Pretzels
- Baguette crisps
- Vegetable sticks (carrots, peppers, celery)
- Anything that makes a great dipper!
Can this dip be made in advance?
Yes, make it a day or two before serving. Mix all the ingredients together, spread into an oven safe or microwavable safe dish and place in the refrigerator. Cover with plastic wrap.
Add 15 minutes extra to the cooking time if baking it directly from the refrigerator.
