For this recipe, we used Athens Phyllo Shells. These shells are crispy, flaky, perfectly sized and ready to use. Just fill the shells with the spinach mixture and bake! Tastes just like the original spanakopita in little bite-sized cups.

Spanakopita Tarts-Ingredients

  • 2 packages Athens Phyllo Cups (15 count per package)
  • 8oz package frozen chopped spinach (drained well)
  • 1/2 cup feta cheese crumbles
  • 2 eggs (beaten)
  • 1 tsp garlic (minced)
  • salt and pepper (to taste)

Instructions

  • Preheat oven to 350 degrees.
  • Thaw frozen spinach and drain well. 
  • Combine spinach, feta cheese, eggs, garlic and salt and pepper.
  • Place phyllo shells on a baking sheet. Generously spoon mixture into each cup.
  • Bake for 15 minutes or until the phyllo ships are golden and filling is heated all the way through. 
  • Serve immediately.
  • Enjoy!
